Production Process
Amaro CastelBrando is a liqueur rich in botanical extracts derived from leaves, roots, and herbs, some from our Botanical Garden. For its production, the finest botanicals are selected and processed according to ancient herbal traditions: they are cold-infused for different durations to extract the most noble and characteristic aromas from each.
Depending on the type of botanical, infusions can last several months.
All the separately obtained essences are then expertly harmonized with barrel-aged grappa.
Organoleptic Characteristics
The aromatic profile is complex and intense: from delicate fruity notes to refreshing hints of dandelion, culminating in robust tones of gentian, rhubarb, and angelica, creating an extraordinary olfactory evolution.
On the palate, it is full-bodied, rich, persistent, and complex, yet elegant and never cloying.

Amaro CastelBrando is a liqueur best enjoyed as a tasting experience. It expresses its characteristics at their best when served chilled or “on the rocks.”
Produced with grapes from vineyards located in the beautiful village of Cison di Valmarino. The Brut has a bright straw yellow color with a very fine, rich, and persistent perlage. The nose is intense, refined, and complex, with characteristic varietal aromas of fruit, particularly apple and pear, along with harmonious mineral and floral notes of white flowers such as wisteria and cornflower. The palate is dry yet pleasantly smooth. Its pronounced minerality gives it body, while a well-balanced freshness enhances its harmony. The Brut Cuvée captivates with its finesse, intensity, and perfect persistence.
Food Pairing: Excellent as an aperitif, ideal with tempura-style vegetables, local cured meats, and cheeses. Delightful with both raw and cooked seafood, such as oysters, sea truffles, and scampi.
Produced with grapes from vineyards in the charming village of Cison di Valmarino. This sparkling wine has a brilliant straw yellow color with a fine, rich, and persistent perlage. The bouquet is delicate and lively, with prominent notes of green apple and citrus fruits. The dominant floral scents recall blooming wisteria and acacia. Well-structured and smooth, it presents a prominent fruitiness, well-balanced sapidity, and an overall pleasant and harmonious taste with excellent persistence. The finish is perfectly crisp and dry.
Food Pairing: Ideal as an aperitif, especially with raw seafood such as scampi, tuna tartare, and sea truffles, or paired with fresh tempura-style vegetables.
