Production Process
Amaro CastelBrando is a liqueur rich in botanical extracts derived from leaves, roots, and herbs, some from our Botanical Garden. For its production, the finest botanicals are selected and processed according to ancient herbal traditions: they are cold-infused for different durations to extract the most noble and characteristic aromas from each.
Depending on the type of botanical, infusions can last several months.
All the separately obtained essences are then expertly harmonized with barrel-aged grappa.

Organoleptic Characteristics
The aromatic profile is complex and intense: from delicate fruity notes to refreshing hints of dandelion, culminating in robust tones of gentian, rhubarb, and angelica, creating an extraordinary olfactory evolution.
On the palate, it is full-bodied, rich, persistent, and complex, yet elegant and never cloying.

Production Method

A dedicated team of three professional technicians oversees the various stages of our gin’s development: a botanical expert, an infusion specialist, and a master distiller.

The juniper berries, red vine leaves, and the other nine botanicals are processed separately, undergoing individual infusions in hydroalcoholic or sugar-based solutions. Each botanical is treated with different extraction techniques and times to obtain its most distinctive aromas.

Once the optimal infusion time is determined for each botanical, the distillation process begins. Each distillation is conducted separately using discontinuous bain-marie stills and both direct and indirect steam. The final step involves selecting the best cuts from the different distillations to achieve the perfect balance and the unique aroma and flavor that define our gin.

Organoleptic Characteristics

A rich and well-balanced bouquet where the scent of juniper berries blends harmoniously with notes of vine leaves, cardamom, and iris root, enriched by delicate nuances from the other botanicals.

Dry and clean, delicately aromatic, with a complex and exclusive aftertaste, it embodies the excellence of a true Dry Gin. Its uniquely dry character comes specifically from the distillation of red vine leaves.

Conegliano Valdobbiadene Prosecco Superiore DOCG Spumante – Extra Dry Cuvée CastelBrando

Produced with grapes from vineyards in the charming village of Cison di Valmarino. This sparkling wine has a brilliant straw yellow color with a fine, rich, and persistent perlage. The bouquet is delicate and lively, with prominent notes of green apple and citrus fruits. The dominant floral scents recall blooming wisteria and acacia. Well-structured and smooth, it presents a prominent fruitiness, well-balanced sapidity, and an overall pleasant and harmonious taste with excellent persistence. The finish is perfectly crisp and dry.

Food Pairing: Ideal as an aperitif, especially with raw seafood such as scampi, tuna tartare, and sea truffles, or paired with fresh tempura-style vegetables.
